The Consortium of Balsamic Vinegar, founded in 1967, promotes, organizes and supports all initiatives for the promotion and protection of his treasure “black” and the spread of knowledge in the world.
Traditional balsamic vinegar is produced only in the provinces of Modena and Reggio Emilia with absolutely well-defined territorial boundaries. It has nothing to do with traditional vinegars but comes from the cooking of the grape must and alcoholic fermentation and bio-oxidation using acetic acetic acid bacteria with a very slow process of aging in different wood barrels that make up the so-called “battery”.
The headquarters of the Coterie is in Spilamberto Modena, at the municipal Villa Fabriani, and can be visited on days Wednesday and Sunday.
The Coterie is a 15-minute drive from the B & B.
